Cooking your duck is nice and easy: first set the oven to 200C/392F/gas 6.

To make sure the duck has a crispy skin, dry it with a cloth before cooking.

Remove the giblets (use these later to make a stock). Calculate the cooking time: 20 mins per 500g (1lb). Prick the skin of duck then rub in some salt. Place on a rack in a roasting tin. Cook in centre of the oven for required time. Check the duck is cooked by piercing the thickest part of the flesh with a skewer: if juices run out clear then the duck is cooked; if not return to the oven for a little longer. When cooked, remove from roasting tin to a warmed serving plate. Serve traditionally with gravy, apple sauce and sage & onion stuffing.

Sheer luxury.rnThis has to be one of the ultimate pleasures. But, bin the traditional and do this. Boil the Giblets with a shallot, 6 pepper corns, a couple of bay leaves and a small pile of grated fresh ginger. Keep it going for about half an hour and maybe brown the giblets before hand in a bit of olive oil.rnrnWhen you get closer to serving time then strain the liquid and feed the giblets to the cat (dad gets the neck bone).rnrnStir into the strained sauce 2 dessert spoons of strong organic rough cut marmalade and continue to reduce.rnrnServe the Duck with usual trimmings and the sauce in a bowl with a spoon. A couple of spoonfuls over the Duck meat make a wonderful combination. I serve Bisto to go with the veg and the potatoes. we cant all be perfect. rn

I first bought a duck from Rona and Nevil when on holiday on Exmoor several years ago. Brought home to roast it made an unforgettable meal shared with friends. The best duck I ever tasted. Last year I ordered a duck for my Christmas meal and the experience was repeated; delicious full flavour, succulent and tender.
